Peanut Butter Thumbprint Cookies
Peanut butter and jelly is a classic combination for a reason. These cookies work great with Strawberry or Strawberry Raspberry Butter. We love to use Nutty Novelties Pure peanut butter in our recipes - you can find that in our small store.
Ingredients
• 3 tablespoons butter
• ½ cup peanut butter
• ½ cup brown sugar
• 1 egg
• 1 cup flour
• ½ tsp baking powder
• ½ tsp salt (if using unslated peanut butter)
• 2-3 tablespoons Bauman's fruit butter
Directions
1. Line a baking sheet with parchament paper. Preheat the oven to 350 degrees.
2. Using a handheld or stand mixer (with paddle attachment), mix butter, peanut butter and brown sugar until smooth. Add egg and mix until smooth.
3. Add flour, baking powder and salt. Mix until just combined. scrape bowl with spatula and stir to remove any remaining flour.
4. Scoop dough 1 tablespoon at a time, forming each tablespoon into a ball with your hands.
5. Flatten each ball into a disc on the prepared cookie sheet. Bake cookies for 7 minutes.
6. Remove cookies from the oven. Use a ½ teaspoon to create an indentation in each cookie. Fill the indentation with the fruit butter of your choice.
7. Bake cookies for 8-10 more minutes, until the edges are starting to brown.
